SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet
potatoes or 1 lg. can of yams
or sweet potatoes, drained
1 c. sugar
1/2 tsp. salt
1/2 stick butter
1/2 c. milk
2 tsp. vanilla

Topping:

1 c. brown sugar
1/2 c. flour
1 c. shredded coconut

Mix potatoes, sugar, salt, butter, milk, and vanilla with an electric mixer until smooth. Pour into a two quart baking dish.

Topping: Mix ingredients together and sprinkle on top of the potatoes. Bake in a 350 degree oven for 40-45 minutes until topping is browned.
