RHUBARB CAKE 
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. light brown sugar
1/2 c. butter
1 egg
1 c. milk
1 tsp. vanilla
2 1/2-3 c. rhubarb in 1" pieces
1/2 c. sugar with 1 tsp. cinnamon

Mix flour, soda and salt. Set aside. In large mixing bowl cream brown sugar and butter until fluffy. Beat in egg at low speed. Beat in flour mixture alternating with milk, until well blended. Stir in vanilla and rhubarb.

Turn into greased and floured 13 x 9 inch pan. Sprinkle with sugar and cinnamon mixture. Bake in 350 degree oven 40 minutes or until inserted toothpick comes out clean. Cool in pan on rack.
