RHUBARB CHEESE CAKE 
CRUST:

1 c. flour
1/2 c. brown sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. walnuts
1/4 c. butter

2ND LAYER:

2 (8 oz.) cream cheese
3/4 c. sugar
3 eggs
1 1/2 tsp. vanilla

Crumble crust ingredients into 9 x 13 inch pan. Bake at 375 degrees for 5-8 minutes.

Beat cream cheese until fluffy. Add the remaining ingredients and beat together. Put on top of baked crust. Bake 10-15 minutes until set.

Mix together in pan on stove 1 tablespoon cornstarch and 1/4 cup water; add 3 cups of rhubarb and 3/4 cup of sugar. Cook until thickened. Put on top of baked cream cheese mixture. Cool and serve.
