RHUBARB CHEESE CAKE | |
CRUST: 1 c. butter 2 1/2 c. flour 1 c. oatmeal 1 c. brown sugar 1 tsp. salt FILLING: 1 1/2 c. sugar 2 (8 oz.) pkgs. cream cheese 2 eggs 3 c. rhubarb, cut into sm. pieces 1/2 tsp. cinnamon 1/4 tsp. nutmeg Mix crust ingredients until crumbly. Press 1/2 of mixture into an ungreased 9"x13" pan. Combine filling ingredients and beat until well blended. Do not overbeat. Pour filling over crust, then sprinkle with remaining crumbs. Bake at 350 degrees for 40 minutes. Cool and cut. NOTE: Can use 1/2 of above recipe for 9"x9" pan. |
