CORN SALAD | |
1/2 lb. white corn 1/2 lb. tomatoes 1/2 lb. fresh, cleaned shrimp 1 onion 3 tbsp. salad oil 2 tbsp. vinegar 4 tsp. water Salt to taste Fresh ground pepper Pinch of sugar 1/2 c. fresh parsley, chopped 1/2 c. chives, chopped Dice the tomatoes, with or without skin, and mix with corn. Cook, chill, and skin shrimp. Chop parsley and chives and mix with remainder of ingredients as salad dressing. Add dressing to corn/tomato/shrimp and mix thoroughly. |
