FEATHER SPONGE CAKE | |
6 egg yolks 1/2 c. cold water 1 1/2 c. sugar 1/2 tsp. vanilla 1/2 tsp. lemon extract 1/4 tsp. almond 1 1/2 c. cake flour 1/4 tsp. salt 6 egg whites 3/4 tsp. cream of tartar Beat egg yolks until thick and lemon colored. Add water and continue beating until thick. Gradually add sugar. Then extracts. Sift salt with flour and fold in gradually. Beat egg whites until foamy and stiff. Add cream of tartar until glossy peaks form. Fold in egg whites. Bake in tube pan for 60 minutes at 325 degrees. |
