VICKI'S BREAD 
3 c. flour (all purpose or bread)
1 c. whole wheat flour
2-3 tsp. salt
3 tbsp. butter, cut into bits
1 tbsp. sugar
1/2 c. warm water
1 pkg. yeast
1 1/4 c. cold water

1. Mix the flour and the whole wheat flour together in the cuisinart.

2. Place butter on the flour and process slightly.

3. Proof the yeast for 5 minutes in the 1/4 cup warm water and add 1 tablespoon sugar. Then pour on top of the flour with machine off. Process 5 seconds.

4. With machine running, add cold water until a ball forms.

5. Knead dough 60 seconds, stop and turn dough every 15 seconds for uniform kneading.

6. Put dough in a plastic bag, squeeze air out of bag and tie bag at top so dough has plenty of room to rise.

7. Let dough rise about 1 hour in a warm place.

8. Lightly grease 2 long skinny French loaf pans. Sprinkle them with cornmeal.

9. Form dough into 2 long loaves and place in pans. Slash diagonally in 3 places. Cover with a cloth and let rise 10 to 30 minutes.

10. Put loaves in a cold oven. Turn to 425 degrees and bake 25 minutes.

11. Spray a few times with cold water during baking time for a crustier loaf.

12. Cool on racks.

Good tasting bread...I didn't use the loaf pans I just shaped two loaves out of the dough and baked them on a rimmed baking sheet. The whole family loved it!
