ONION RINGS 
6 med. Bermuda onions
2 c. milk (buttermilk works the best)
3 eggs
Flour
Salt
Oil (1/2 olive oil and 1/2 corn oil or any good vegetable based frying oil)

Cut onion into 1/4 inch slices. Separate onion slices into rings. Combine milk and eggs; beat thoroughly. Add the onion rings. Drain the rings and drop into the flour. Shake off excess flour and let sit for 20 to 30 minutes.

Fry in hot oil (375 degrees). Stir with a fork to separate. Drain on brown grocery bags (they will absorb more grease then paper towels and the rings will not stick to them). Season with salt.

VARIATION: Adding seasoning to your flour will make your onion rings more interesting. Try adding garlic, paprika, oregano, lemon pepper, Italian herb seasoning or Parmesan cheese.
