FRIED FISH | |
3 lbs. fish fillets 1 lemon, sliced 2 c. pancake mix 24 oz. oil for frying 1 c. buttermilk Flour for dredging 2 1/2 c. club soda Cut fillets in half to make triangle shape. Cover with buttermilk and sliced lemon and refrigerate for 2 hours. Remove fillets from buttermilk and discard lemon slices. Dredge fish in flour and let dry for a few minutes. Combine pancake mix and club soda to the consistency of buttermilk. Heat oil in heavy skillet until hot. Dip floured fillets in batter and let excess drip off. Fry four minutes on each side. Drain on paper towels. To keep fish warm until ready to serve, arrange on a cookie sheet in a single layer and place in 250 degree oven until all fish is fried. |
