EVELYN'S LO CAL QUICHE 
1/2 c. plus 2 tbsp. flour
3 tbsp. butter
1/4 c. plain yogurt
1 c. broccoli, chopped and cooked
1/4 c. chopped scallions or 1 med. onion
1 tbsp. Bacos
1/2 c. chopped ham
1/2 c. shredded Swiss cheese
4 eggs
1 c. skimmed milk
1/4 tsp. pepper and salt

Crust: Combine flour and butter until it resembles coarse meal. Add yogurt and mix well. Form into a ball and roll to fit 9 inch pie pan.

Filling: Combine veggies, ham, bacon and half of the cheese. Cover bottom of pastry shell with part of the cheese. Add veggies mixture. Combine eggs, milk and remaining salt and pepper and pour over veggies mixture. Top with some cheese. Bake at 325 degrees for 50 to 60 minutes.
