RICE PUDDING 
3/4 c. raw rice
4 1/2 c. milk, scalded
3 eggs
2 whole eggs
4 tbsp. cornstarch
3/4-1 c. sugar
1/2 tsp. vanilla
1/4 tsp. almond flavoring

MERINGUE:

6 tbsp. sugar
3 egg whites
1/4 tsp. cream of tartar
Vanilla to taste

Cook rice and set aside. Separate the 3 eggs. (Save whites for meringue.) Make pudding, milk, 2 eggs, 3 egg yolks, cornstarch and sugar. Cook until thickens. Add flavorings and rice. Put in 9"x13" pan. MERINGUE: Beat egg whites. Add cream of tartar and vanilla. Gradually add sugar until soft peaks. Put over the rice mixture. Bake 10 to 12 minutes at 350 degrees until browned.
