HAWAIIAN SMOKED SAUSAGE 
1 each med. green pepper & onion (chopped into 1 inch pieces)
3 lg. tomatoes, peeled & chopped
1 tbsp. butter

Microwave butter. Add peppers, onions and tomatoes until tender. Add:

Microwave on high 4 minutes. Mix together: 1 tbsp. wine vinegar 1 tbsp. soy sauce 1 tsp. ginger

Add to casserole, cover and microwave on high until thick, stirring halfway. Add: 2 c. drained pineapple chunks

Heat until hot and serve over cooked rice. Serves 4 to 6. Can double amount and freeze without rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
