HAWAIIAN TURKEY SALAD 
8 oz. can pineapple chunks in juice, drain (reserve juice)
8 oz. can sliced water chestnuts, drained
1 med. unpeeled apple, cored and chopped
1/3 c. chopped macadamia nuts
1/2 c. mayonnaise or salad dressing
1/2 c. plain yogurt
1/4 c. shredded coconut
3 c. cooked brown rice
2 c. coarsely chopped cooked turkey

Combine rice, turkey, pineapple, water chestnuts, apples, and nuts. Toss with mayonnaise, yogurt, and 1 tablespoon pineapple juice. Garnish with toasted coconut. Yield: 6 servings.
