TURKEY WALDORF SALAD 
SALAD:

2 c. cooked, diced turkey
1 1/2 c. fresh bean sprouts
1 apple, unpeeled, diced
1 stalk celery, diced
1/4 c. dried currants or raisins
3 tbsp. chopped walnuts

DRESSING:

3 tbsp. plain low-fat yogurt
2 tbsp. mayonnaise
2 tbsp. orange juice
1 tsp. grated orange rind

In a medium bowl, combine all the salad ingredients.

In a small bowl, combine all the dressing ingredients. Pour the dressing over the turkey mixture and toss the salad. 4 servings.
