CHICKEN FRICASSEE 
1 chicken, cut up
1 lg. onion, cut in 4
1 tbsp. olive oil
1 piece lean ham hock
2 laurel leaves
2 tomatoes, cut up
2 garlic cloves
1 c. chicken broth
1 tbsp. raisins
1 tbsp. green olives (omit if dislike)
1 tsp. pepper
1 tsp. salt
1 lg. carrot, peeled

Place all ingredients in a pot. Cook on stove top on medium heat until chicken is tender. Add 2 medium size cut-up potatoes and cook until these are done. Serve with rice.
