JOE'S CHICKEN FRICASSEE 
1/4 c. flour
3 tsp. salt
1/2 tsp. pepper
1 (4-5 lb.) chicken, precooked and cut up
1/4 c. olive oil
1/4 c. water
1/4 c. chopped onions or more
1-2 c. cut up carrots
3-4 regular size potatoes, cut small

Pre-cook potatoes, carrots, and chicken. Combine flour, 2 teaspoons salt and pepper in pie plate. Roll chicken in the mix until coated well. Heat olive oil and brown chicken. Add all vegetables and continue to cook. Add water, the remaining salt, onions, celery, etc. and cover.

Mix 1 1/2 tablespoons flour for each cup of stock. Blend until smooth. Add to chicken and then simmer until thickened.
