POTATO PANCAKES 
4 c. boiled potatoes, shredded
1/3 c. diced onions
1 egg
2 tsp. flour
1 tsp. salt
1 tsp. pepper
1/4 c. butter

Drain liquid from potatoes. Combine potatoes with onions, egg, flour and salt and pepper. Shape mixture into pancakes. Fry in butter on low heat until golden brown.
