ENCHILADAS 
2 lbs. hamburger, very lean
1 pt. sour cream, optional
Hot peppers, optional
2 bunches green onions
4 cans mild enchilada sauce
1 (8 oz.) mild cheddar cheese
1 (8 oz.) Monterey Jack cheese
Flour tortillas

Brown meat with chopped onions, drain. Add sour cream and fill tortilla with mixture. Roll up. Pour 1/2 enchilada sauce over them after putting them in a casserole dish. When dish is filled put mixed shredded cheese over the top and the rest of the enchilada sauce. Bake at 350 degrees for 25 to 30 minutes. 10 to 11 servings. Quick and delicious.
