CRUSTLESS SPINACH QUICHE 
1 c chopped onion
1 c sliced mushrooms
1 tbsp vegetable oil
1 10 oz pkg chopped spinach, thawed and well drained
2/3 c chopped ham (cooked)
5 eggs
3 c shredded cheese
Salt and pepper to taste

Sauté onion and mushrooms until tender. Add spinach and ham, cook until moisture is evaporated. Cool slightly; Beat eggs, add cheese and mix well. Stir into spinach mixture and add salt and pepper to taste. Spread in 9 inch pie pan or Quiche dish.

Bake in 350°F oven for 40 to 45 minutes.

Serves 8.
