CRANBERRY BREAD 
1 c. sifted flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. sugar
1/4 c. melted butter
1/2 c. orange juice
1 egg, well beaten
1 tbsp. grated orange rind (rind of 1 orange)
1 1/2 c. fresh cranberries, halved
3/4 c. pecans, chopped (or use walnuts)

Preheat oven to 350 degrees. Grease and flour 8 1/2 x 4 inch loaf pan. Sift together flour, salt, baking powder, baking soda and sugar. Mix together butter, orange juice, egg and orange rind and stir quickly into dry ingredients just until moistened. Stir in berries and nuts. Bake one hour or until top is golden brown.
