CHILI CON QUESO 
1 onion, diced
1 tbsp. oil
1 1/2 lb. ground beef
1 (4 oz.) can diced green chilies
1/2 tsp. oregano
1/2 tsp. chili powder
1 1/2 tsp. salt
2 tbsp. flour
1/2 c. water
2/3 lb. American cheese, cubed

Saute onion in oil until tender, add ground beef and brown, stirring constantly. Add chilies and remaining ingredients. Cook for a short time at low temperature. Add cheese, cover and hold at low temperature until cheese melts. Mix thoroughly. May be served in chafing dish with tortilla or corn chips.
