PINEAPPLE - CARROT CAKE 
1 1/2 c. all-purpose flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2/3 c. cooking oil
2 eggs
1 c. raw carrots, finely shredded
1/2 c. crushed pineapple
1 tsp. vanilla

Stir together dry ingredients, add oil, egg, carrots, pineapple and vanilla. Mix. Pour into greased and floured 9 x 9 x 2 inch baking pan. Bake at 350 degrees for 35 minutes.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese
4 tsp. butter, softened
1 tsp. vanilla
Dash of salt

Gradually add 2 1/2 cups powdered sugar. Stir in 1/2 cup chopped pecans.
