PINTO BEAN PIE 
1 c. cooked pinto beans
1 c. Baker's angel flaked coconut (canned)
1 c. pecans, chopped
4 eggs
3 c. sugar
2 sticks butter

Cook pinto beans until done, do not season. Drain. Mash beans and set aside. Melt butter and add sugar. Beat eggs, pour into butter and sugar mixture and mix.

Add coconut, mashed beans and nuts. Pour into unbaked pie shell and bake at 350 degrees for about 35 to 45 minutes. Makes 3 pies. Top with whipped cream and top with pecan halves or whole cooked pinto beans.
