TOMATOES PROVENCAL 
2 lg. tomatoes
1/4 c. soft bread crumbs
2 tbsp. snipped parsley
4 tsp. grated Parmesan cheese
Dash salt
Dash pepper
4 tsp. olive or cooking oil
2 clove garlic, minced

Remove core from tomatoes. Cut in half crosswise. Combine soft bread crumbs, parsley, the Parmesan cheese, salt and pepper. Place tomatoes in an 8 x 1 1/2 inch round baking dish. Sprinkle crumb mixture atop tomato halves. Combine oil and garlic. Drizzle 1 teaspoon oil mixture over each tomato half. Bake in a 375 degree oven for 20 to 25 minutes. Serve with Rack of Lamb. Makes 4 servings.
