BANANA DATE MUFFINS | |
1 1/2 c. whole wheat flour 1/2 c. bran 1/2 c. fructose 1/2 c. chopped dates 1 c. peeled, shredded apple firmly packed 1 tbsp. baking powder 3 lg. ripe bananas 2 egg whites 1/2 c. skim milk Preheat oven to 350 degrees. Spray muffin tin with Pam. Mix all ingredients except milk and egg whites in large bowl. Lightly beat egg whites, gradually add skim milk. Add to rest of the ingredients. Blend well. Fill muffin tin 2/3 full. Bake 20 to 25 minutes. Makes 16 to 18 muffins. Information per muffin: Calories: 105. Carbohydrates: 25.1 grahams. Protein: 1.89. Fat: 0.3 grams. Sodium: 10 milligrams.
