CHICKEN CACCIATORE 
Frying chicken, cut up
1/3 c. oil
1 chopped onion
1 clove garlic, crushed
1 (4 oz.) can mushrooms, drained
1 can tomatoes
1 (8 oz.) can tomato sauce
1/4 c. water
1 tsp. salt
1 tsp. basil
1/2 tsp. oregano
1/8 tsp. pepper
1/4 c. dry white wine

Brown chicken in oil. Remove chicken, add onions, garlic, and mushrooms, cook until tender. Add chicken, tomato sauce and spices. Cover and simmer 45 minutes. Add white wine and simmer 15 minutes more. Can be cooked in 350 degree oven for 40 minutes, basting often.
