2 lbs. of lean lamb cut into 1-inch square cubes
Marinade: 1 c. red wine 1 tsp. salt Freshly ground pepper to taste 1 tsp. oregano 1 tsp. whole dried mint, crush with hand 3 cloves of garlic, crushed 8 loaves of Pita bread with olive oil, grilled in frying pan
Garnishes: Sliced paper thin tomatoes Plain yogurt or sour cream
Marinate cubes of meat in a large bowl. Mix two or three times during a 2 hour period. Place on wooden skewers and broil, turning once, until tender but still a bit pink on the inside. Serve in a grilled pita loaf with onions, tomatoes, and yogurt or sour cream. This dish is also great with pork.
