FRIED PIES 
4 c. all-purpose flour
4 tsp. baking powder
1 tsp. salt
1 c. shortening
2 whole eggs
1 lg. can evaporated cream
Apples, peaches, raisins, pineapple, or apricots

Mix flour, baking powder, salt, and shortening until fine. Mix eggs with cream; combine with flour mixture. Beat until stretchy. Refrigerate overnight. Roll out circles, using a small saucer as guide. Fill with fruit which has been cooked, sweetened, thickened, and cooled overnight. Wet edges of pastry with pastry brush dipped in water. Fold over filling; press with fork tines around edges. Fry in deep oil until golden brown. Yield: 25 servings.
