PASTRY FOR FRIED PIES | |
2 c. self-rising flour 2 c. plain flour 1/2 tsp. salt 3/4 c. shortening 1 c. buttermilk Sift flours before measuring. Mix flour and salt together. Cut in shortening. Add buttermilk and knead until smooth. Divide dough into 4 balls. Roll out dough very thin on floured pastry cloth. Cut circle of pastry using a plastic lid from Crisco. Place fruit on half of each circle. To seal pies, moisten edges of circle with a brush dipped in cold water. Fold in half making sure edges are together using a fork dipped in flour to press edges firmly together. Make several holes in one side of pie. Heat shortening to 350 degrees and fry pies until golden brown on both sides. Drain on paper towel. Makes about 40 pies. Dough can be frozen and used later. |
