COUNTRY-STYLE PANCAKES 
1 1/4 c. self-rising flour
1 tsp. sugar
1 egg
1 c. milk
1 1/4 tbsp. soft shortening

Mix flour and sugar. Beat egg, add milk and shortening and blend into flour mixture. Drop batter on hot griddle. Turn pancakes when bubbles appear.

Makes sixteen (4-inch) pancakes.

I used about 3/4 cup milk. Made 6 (4 to 5 inch pancakes). Not bad, reminded me of waffle batter and taste was waffle-like because of the sugar/egg addition. Very filling too! I would say the yield is 2 servings.

I like a little sweeter pancake so I increase the sugar to 1/2 of a tablespoon. I used about 1 cup of milk just enough to it a medium batter (like a cake batter). I also add 2 tablespoons of cinnamon and 1 1/2 of vanilla. We loved these pancakes.

I use 1 cup half and half instead of milk and add 1/2 teaspoon vanilla. Superb and fluffy!
