FLORENCE GUEST'S DARK BREAD | |
1 1/2 pkg. yeast 2 c. lukewarm water 2 tbsp. sugar 2 tsp. salt 3 c. white flour 1/2 c. brown sugar 3 tbsp. shortening or lard 1/2 c. boiling water 3 c. stone ground wheat flour Combine yeast, water, 2 tablespoons sugar, salt and flour. Blend until bubbly and let rise for 1-2 hours. Melt brown sugar, shortening and water together. Cool and add to batter with 3 cups Stone ground wheat flour. If sticky add a little more flour; knead. Let rise and knead again. Make 2 loaves, let rise and then bake at 325 degrees for 15 minutes and 350 degrees for 40 minutes. It is done if it sounds hollow when you tap it. Cool on rack, butter top and cover with a tea towel. Wrap when cool. |
