PURE FRUIT COOKIES 
3 med.-size ripe bananas
1 tsp. vanilla
1 1/2 c. rolled oats
1 1/2 c. dried fruits, coarsely chopped (dates, apricots, and raisins)
1/3 c. peanut or safflower oil
1/8 tsp. salt
1/2 c. uncooked oat bran for creamy style hot cereal
1/2 c. walnuts or almonds, chopped

Preheat oven to 350 degrees. Grease 2 cookie sheets. Mash bananas in a large bowl until smooth (about 1 1/2 cups). Stir in oil, vanilla and salt. Add oats, oat bran, mixed fruits and nuts. Stir well to combine. Drop by rounded teaspoonsful on cookie sheets about 1 inch apart. Flatten slightly with back of a spoon. Bake 20 to 25 minutes or until bottom and edges are lightly brown. Cool completely, refrigerate. Yields 2 dozen cookies at 105 calories each with 0 cholesterol.
