SPICED CUCUMBER SPEARS 
1 tbsp. cider vinegar
1 pkg. Sweet & Low
1/8 tsp. red pepper
1/2 lb. sm. cucumbers
Paprika

Combine first 3 ingredients in a 12 x 8 x 2 inch baking dish, stirring to dissolve Sweet and Low. Cut each cucumber into 4 spears. Place in dish, cut side down. Cover and refrigerate 1 hour. Sprinkle with paprika. (Measure 1 cup servings.) Single serving = 1 cup vegetable.
