SALMON CROQUETTES 
1 lg. can red salmon, drained and deboned
1/3 c. finely chopped onion
1 tbsp. chopped parsley
1 lg. potato
1 egg, beaten
Salt, red, and black pepper to taste
Cracker meal

Peel and boil potato until soft enough to mash. Combine with salmon, onion, parsley, egg, and seasonings. Beat on low speed with electric mixer until well blended. Shape into croquettes and fry in oil in heavy skillet until golden brown. Drain on paper towels.
