SALMON CROQUETTES 
1 lg. can salmon and juice
1 tbsp. grated onion
1 well beaten egg
1/2 tsp. salt
1/2 tsp. black pepper
1 sm. pkg. of crackers, crushed

Mix all ingredients together to form croquettes. Put on wax paper and cover with wax paper. Chill. Then fry in vegetable oil on all sides until brown. Drain on paper towel or paper bag.

Serve with green peas, mashed potatoes, and new carrot salad.
