POWERFUL BRAN MUFFINS 
2 c. flour (whole wheat)
1/2 c. sugar
5 tsp. baking powder
1 tsp. baking soda
1 tsp. salt (optional)
2 c. Bran (either wheat or oat), I use 1/2 of each

Mix all dry ingredients; make a hole in the middle and add 2 eggs, 2 cups skim or 1% milk, and 1/4 cup vegetable oil. Mix by hand until dry ingredients are wet. Add optional raisins and cinnamon.

Fill paper lined muffin tins about 2/3 full. Makes approximately 2 dozen. Bake at 350 degrees for about 20 minutes, but check at 15. Muffins will be done when after tapping the center of the muffin it springs back.
