BANANA BRAN MUFFINS 
1 1/4 c. flour
1/2 c. natural bran
1/3 c. wheat germ
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
1/2 c. brown sugar
1 egg
2/3 c. mashed overripe banana
1/2 c. buttermilk
1 tbsp. molasses
3/4 c. raisins
1/3 c. chopped nuts (pecans or black walnuts)

Combine all dry ingredients. Coat nuts and raisins with 1/4 cup of flour mixture. Combine all other ingredients, except nuts and raisins. Add dry ingredients and mix with electric mixer until just moistened good. Fold in nuts and raisins.

Fill paper lined muffin pan about 3/4 full. Makes 12. Bake at 350 degrees approximately 20 minutes. These are delicious for breakfast and are well worth the effort. Also, these are best when you use very ripe bananas.
