BANANA BRAN MUFFINS 
1 1/4 c. unbleached white flour
1/4 c. sugar
1 tbsp. baking powder
1 1/2 c. whole bran cereal
3/4 c. skim milk
1 c. mashed bananas
1 egg
1/4 c. vegetable oil

Preheat oven to 400 degrees. In small bowl, combine the flours, sugar, and baking powder and set aside. In a large bowl, mix together the cereal, milk and banana, let stand for 1 to 2 minutes until cereal softens. Add egg and oil to cereal mixture and beat well with spoon. Stir in flour mixture until just combined. Spoon batter into 12 greased muffin tins. Bake until golden brown, about 25 minutes.
