CHOCOLATE ZUCCHINI CAKE 
1 1/2 c. sugar
1 c. butter
1 tsp. vanilla
2 eggs
2 1/2 c. flour
1/2 c. sour cream
1/4 c. unsweetened cocoa
1/2 tsp. salt
1 tsp. baking soda
2 c. shredded zucchini
1 (6 oz.) pkg. semi-sweet chocolate chips
1 c. chopped walnuts
Confectioners' sugar

In a large bowl, with an electric mixer on low speed, beat the sugar, butter, and vanilla with the eggs until blended. Increase speed to high and beat until light and fluffy, about 5 minutes. Reduce speed to low and add the flour, sour cream, cocoa, baking soda, and salt. Beat until blended.

Increase speed to medium and beat 1 minute. Fold in zucchini with a spatula. Add chocolate chips and nuts and blend well (mixture will be thick). Spread evenly in a greased and floured 9x13 inch pan. Bake in a preheated 350 degree oven for 40-45 minutes, until cake tests done. Let cool in pan and sprinkle with confectioners' sugar.
