HERBED SQUASH CASSEROLE 
2 lb. zucchini or yellow squash
1 med. onion, sliced
2 carrots, sliced
2 tbsp. butter or bacon drippings
1/2-1 c. sour cream
1 (10 3/4 oz.) can cream of chicken soup
2 c. Pepperidge Farm herb or cornbread seasoned stuffing
1/2-3/4 c. butter, melted
Salt & pepper to taste

Following optional: 1 can water chestnuts, sliced Dash Tabasco Dash Worcestershire sauce
