BEST EVER SPINACH AND RICE 
3/4 c. cooked brown rice
1/2 c. grated cheese
1 lb. fresh spinach, chopped
2 eggs, beaten
2 tbsp. parsley
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. wheat germ
1 tbsp. butter, melted

Combine cooked rice and cheese. Combine eggs, parsley, salt and pepper. Add the two mixtures together and stir in raw spinach. Pour into oiled casserole. Top with wheat germ which has been mixed with melted butter.

Bake at 300°F for 35 minutes.

Serves 4.
