OKRA WITH CHICKEN AND TOMATO
SAUCE BEMI AA'DJAJJ
 
1 lb. okra
2 lb. chicken breasts, cut into pieces
1/3 c. oil
4 cloves garlic
1 1/2 c. fresh tomatoes or 1/2 c. tomato sauce
1 tsp. salt
1 c. water
1/2 tsp. black pepper
1/2 tsp. allspice
1 tsp. kisibra ground coriander
1 tbsp. butter
1 clove mashed garlic
2 tbsp. lemon juice

Wash and remove stems of okra. Fry with garlic in oil. Remove and reserve. Fry onions in oil. Remove and reserve. Add chicken to pan. saute lightly. Add okra. Add onions. Add tomatoes, salt, pepper and allspice and 1 cup of water. Stir gently. Simmer 15 minutes. Fry kisibra in 1 tablespoon butter with 1 clove of mashed garlic. Add lemon juice. Pour over top. Simmer 5-7 minutes. Stir gently being very careful not to break okra. Serve over rice.
