TORTELLINI WITH CREAMY SPINACH
SAUCE
 
1 box regular or spinach tortellini
3 med. onions
2 garlic cloves
Salt & pepper
1 (9 oz.) pkg. frozen creamed spinach
1/4 c. heavy cream
1 tbsp. olive oil
1/2 c. Parmesan cheese

Cook tortellini according to package directions. Drain and rinse in cold water. Dice onions and mince garlic. Saute in hot oil. Add frozen spinach and melt over low heat. Stir in heavy cream. Add salt and pepper to taste. Pour over drained tortellini and sprinkle with Parmesan cheese.

Half and half can be substituted.
