SAUERKRAUT AND SAUSAGE BAKE 
1 1/2 lb. kielbasa (or pork sausage)
1 (27 oz.) can sauerkraut, rinsed, drained
1 tbsp. sliced green onion, with tops
Packaged instant mashed potatoes (enough for 4 servings)
4 tbsp. grated Parmesan cheese

Stir together sauerkraut and green onion, turn into 1 1/2 quart casserole. Spread sliced kielbasa over sauerkraut mixture (pork sausage should be browned in skillet and fat drained off). Prepare mashed potatoes according to package directions. Stir 2 tablespoons of the cheese into the potato. Spread potato over sausage, sprinkle with remaining cheese. Bake, uncovered, at 400 degrees until heated through, 35-40 minutes. Makes 6 servings.
