LEMON LOAF 
1/2 c. shortening
1 c. sugar
2 eggs
1 1/2 c. flour
1/2 c. milk
1/2 tsp. salt
1 tsp. baking powder
1/4 c. chopped nuts or raisins, optional
Grated rind and juice from 1 lemon.
1/4 c. sugar

Cream shortening. Add sugar and eggs. Add flour, salt, baking powder and lemon rind. Bake in greased loaf pan at 350 degrees approximately 40 minutes. As soon as it is taken out of oven, poke holes in loaf and pour the lemon sugar sauce over top.
