IRISH MEAT LOAF | |
2-3 lb. ground beef 2 eggs, beaten 1 c. favorite bread crumbs 1/2 tbsp. crushed garlic 2 tbsp. brown sugar 2 tbsp. Lea & Perrins 3 tbsp. spicy brown mustard 1 onion, chopped 2 jalapeno 1 c. tomato sauce 6 slices boiled ham 6 sliced cheddar cheese (extra sharp) Mix 2/3 beef, bread crumbs, onion, jalapeno, beaten eggs, 1/2 tomato sauce. Form into loaf. Put ham/cheese on top. Place remaining 1/3 ground meat on it. Combine rest of sauce and other ingredients. Pour over meat loaf. Bake at 350 degrees for 2 hours. Serve with mashed potatoes. Yield: 8. |
