HASH BROWN CASSEROLE 
1/2 c. chopped onions
1 can cream of mushroom soup
1 (3 oz.) pkg. cream cheese, cut into cubes
3-4 c. southern style hash browns
1/3 c. shredded cheddar cheese

Heat oven to 400 degrees. Grease casserole dish. Stir soup, onion and cream cheese cubes. Cook over medium heat, stirring constantly until smooth and hot. In casserole layer potatoes and hot cream sauce ending with sauce layer. Cover. Bake 45 minutes or until bubbly. Remove and sprinkle with cheddar cheese. Heat until melted. 3 to 4 servings, double recipe for 8 to 10 servings.
