HERBED TURKEY CASSEROLE 
Preparation time: 20 minutes. Baking time: 2 hours. Oven temperature: 350 degrees. Serves: 6.

1 half turkey breast, 2 1/2 to 3 lbs.
1/3 c. butter
1/2 tsp. each salt, dried rosemary & thyme leaves
1/4 tsp. black pepper
3 med. new potatoes, halved
2 lg. carrots, sliced
2 stalks celery, sliced
2 zucchini, sliced
Paprika
Celery leaves for garnish (opt.)

1. Place turkey in oiled shallow casserole or baking pan.

2. In small saucepan, melt butter. Stir in salt, rosemary, thyme and black pepper. Brush turkey with the mixture.

3. Cover with the lid or heavy foil.

4. Bake at 350 degrees for 1 hour.

5. Remove turkey from oven. Uncover. Add vegetables. Baste generously with herb butter sauce. Cover. Bake 30 minutes longer. Baste again. Bake, uncovered, another 20 to 30 minutes or until turkey is browned.

6. Arrange turkey and vegetables on serving platter. Sprinkle turkey with paprika. Spoon pan drippings over all. Garnish with celery leaves, if desired.

MICROWAVE TIPS: Prepare turkey and vegetables. Place turkey in microwave-safe casserole. Microwave on Medium-High (70%) power for 25 minutes. Baste with herb butter. Add vegetables. Microwave on High (100%) power for another 15 to 20 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
