DOVE IN WINE SAUCE | |
12 dove, whole or breasts 1 tsp. salt 1/2 tsp. black pepper 1/2 tsp. paprika 1/2 c. milk 1 c. flour 1 cube butter 1/2 c. sliced mushrooms, drained 1 onion, chopped 1 can cream of chicken soup 1/4 c. consomme 1/4 c. white sherry 4 tbsp. orange juice Season flour with salt, pepper, and paprika. Dip dove in milk, then in flour. Brown quickly in butter. Place in baking dish. Pour off 1/2 of drippings. In same skillet saute mushrooms and onions until golden brown. Add soup consomme and wine. Mix and pour over dove; cover. Bake at 250 degrees for 1 hour. Remove from oven. Stir in orange juice and serve. Wonderful with mashed potatoes, whole baby carrots, and salad. Serves 4. |
