CARROT CAKE & FROSTING | |
1 1/2 c. salad oil 2 c. sugar 4 eggs 3 c. carrots, grated 2 tsp. salt 2 tsp. baking soda 2 tsp. cinnamon 1 1/2 c. nuts 2 1/4 c. flour FROSTING: 1 (8 oz.) pkg. cream cheese 1/4 lb. butter 1 lb. powdered sugar Mix oil, sugar and eggs. Add dry ingredients, mix well. Add carrots and nuts. Pour in greased and floured 9 x 13 inch pan. Bake at 350 degrees 60 minutes. FROSTING: Cream cheese and butter will blend a lot easier if left out of the refrigerator a couple hours before making frosting. It also gets a lot more creamy if you us an electric mixer. |
